Chicken Fried Rice

Chicken Breast, no skin, 1 breast, bone and skin removed White Rice, long grain, 2 cup Green Peppers (bell peppers), 1 cup, strips Peppers, sweet, red, raw, sliced, 1 cup, strips Onions, raw, 1 cup, chopped Olive Oil, 2 tbsp Chicken Broth, 1 cup (8 fl oz)
Pour 2 tbsp olive oil into a skillet
let the olive oil get a little hot, add the green bell peppers, red bell peppers and onions, and chicken diced and sautee'.
Once the onions, red and green bell peppers are soft and the chicken is done, pour in the chicken broth and simmer, add the white rice, and let rice soften up, turn down heat and let simmer, once the rice is done, put to side and let sit for about 5 mins.
