Pork Tenderloin with Apple Stuffing

Ingredients
1 lb pork tenderloin1 Tbsp fresh sage1/2 cup diced apple1 slice of multigrain bread, cubed (small)1/2 cup plus 3 Tbsp apple juice, unsweetenedFresh pepper
Directions
Combine apples, bread, sage and the 3 Tbsp of apple juice in a bowl. Cut the tenderloin in half lengthwise but do not cut all the way through. Spread the apple mixture over the tenderloin. Close the tenderloin and tie with string every couple of inches to hold the stuffing in. Sprinkle with pepper.

Preheat oven to 375.

Spray skillet with cooking spray. Brown all sides of tenderloin in an ovenproof skillet. Put skillet in oven until tenderloin is cooked, approx 20 min. Let stand a few minutes on a cutting board before cutting into 8 slices. While meat is resting, put skillet back on the stove, add the 1/2 cup of apple juice. Scrape up the brown bits while stirring until the juice is reduced be half. Drizzle the juice over the slices when on the plate.
