Apple Pie Oatmeal

Ingredients
1/3 cup rolled oats1/3 cup water1/3 cup milk1/2 Tbs ground flax seeddash salt1 apple, shredded or 1/3 cup applesauce1/8 tsp vanilla extract1/2-1 Tbs cinnamon (depending on preference)1 Tbs chopped pecans or walnuts
Directions
1. Combine the oats, water, milk, flax seed, vanilla and salt in a small pan. Leave to sit for 10 minutes. Cook over medium low low heat for 5 minutes.

2. Add the apple and cinnamon, cook for another 2-5 minutes, until the oats reach the desired consistency.

3. Serve and top with nuts.

    Try dropping tablespoonsful of this mixture on a greased baking tray and baking in a moderate oven for 15 minutes for scrummylicious cookies that don't bump up cholesterol ! - 10/21/09
