Zucchini, Broccoli & Cauliflower Soup

Ingredients
1 medium onion, chopped2 cloves garlic, crushed1 1/2 tbs olive oil2 stalks celery, chopped600gm zucchini, chopped600gm broccoli, chopped600gm cauliflower, chopped8 cups water4-5 chicken stock cubesSalt & Pepper to taste
Directions
Fry onion, garlic & celery in oil until onion is soft. Add remaining ingredients, bring to boil then simmer for 20 minutes or until vegetables are tender. Remove from heat and then puree to desired consistency.
