1 cup chopped onion1 cup chopped carrots1 cup chopped celery1/2 lean ground beef1 tsp dried basil1 tsp dried parsley4 cups fat free chicken broth4 cups chopped potatoes1/4 cup white flour1 cup 2% milk8oz - 2% Velveeta CheeseTop with:Sour CreamDill Pickles
Directions:
Add first four ingredients to a skillet and brown. Then add basil, parsley, broth, and potatoes until the potatoes are tender.
Blend flour and milk and add slowly to soup. Cover and simmer until thickened. Stir in cheese until melted.
Serve with dill pickles and sour cream.
