Chicken Enchilda Bake

1 cup onions chopped1 cup green peppers chopped1 tsp extra light EVOO1 127 ml can green chiles (Ols El Paso was used)14oz cooked diced chicken breast1 cup black turtle beans1/2 cup canned diced tomatoes1 cup fresh tomatoes diced1 pkg Old El Paso taco seasoing 40% less salt5 tbsp 1%sour cream divided1 cup Kraft Tex-Mex light cheese blend
Soften onions and peppers in EVOO add in chilies, chicken beans and tomatoes. simmer 3-5 minutes until tender. Add in 2 tbsp sour cream and seasoning packet. stir to coat
Pour into 9x13 glass dish that has bean sprayed with pam, Spread to with 3 tbsp sour cream and sprinkle with cheese.
Bake at 350 for 30 minutes until hot
To serve wrap in tortilla shells, or serve with hard shells or nacho scoops. Couold also top with minced green onion, tomatoe, olives and/jalepenos as desired just track as appropriate.
