Ginger-Lemon Chicken Stir Fry

Ingredients
1 chicken breast (boneless, skinless) sliced thin1 chicken thigh (boneless, skinless) sliced thin3 cloves garlic1 inch gingersoy sauce4c bird's eye oriental stir-fry (w/o sauce)1 tsp sesame oil1-2 TBS lemon juice
Directions
Spray a wok or pan with olive oil non-stick spray. Heat to medium-high heat. Grate in garlic & ginger and cook on high until fragrant. Add sliced chicken and brown, sprinkling with soy sauce to keep moist. When chicken is browned (not necessarily cooked through), add vegetables and stir-fry until hot. During the last 30 sec of cooking, add sesame oil & lemon juice and toss to coat. Serve over cooked brown rice. Makes 2 generous servings.

    I made this with fresh cut vegetables and lime instead of lemon. I think it needs a little more ginger and lime, but I will definately make it again. I also put it over Jasmine rice instead of the brown rice. Yum! - 1/3/10
