2 1/3 cups Roasted Sweets and Apple Butter (or pumpkin pie *filling* - not pure pumpkin)1/2 cup sugar1 egg1 tbsp vanilla1 tbsp ground flaxseed1/2 cup 1% milk1 cup flour1/2 cup whole wheat flour1/2 cup rolled oats (not instant or quick cooking)1 tsp baking powder1 tsp baking soda3/4 cup fresh blueberries1/3 cup sliced fresh strawberries
Preheat oven to 375F, lightly grease a loaf pan.
In a large bowl, beat together butter or pumpkin pie filling, sugar, egg, vanilla, flaxseed and milk. Set aside.
In another bowl whisk together flours, oats, baking powder and baking soda
Gently fold into the wet ingredients, stirring until just moistened.
Fold in berries and stir just until combined.
Bake 30 minutes, then turn the oven down to 350F and bake a further 20 minutes.
Cool in pan 20 minutes before turning out onto a rack and cooling completely.
