Baked Chicken Breast with Roasted Cherry Tomoatoes and Baked Sweet Potato Fries

1 Large Boneless/Skinless Chicken Breast10 Cherry TomatoesOne Large Sweet Potato1.5-2 Tbsp of Salt (Try to limit)1-2 Tbsp of Black Pepper1-2 Tbsp of Garlic Powder or Minced Garlic
Step One: Preparation
Begin by preparing your cookware. You will need two backing dishes. Spray dishes with NonFat Cooking Spray. (You may have to spray three additional times throughout cooking process as well.) This is a great way to save on the fat, however. Tip: Use 100% Pure Olive Oil Sprays so that you can spray directly on the food as well.
Pre Heat the Oven to 350 Degrees.
Clean and Season Chicken. Thoroughly rinse your breast and season both sides with salt and pepper to taste. Try to limit yourself with salt. Place breast on a baking sheet.
Slice Cherry Tomatoes in half and add then to the top of the chicken. This will allow them to roast during cook time.
Cut sweet potato into fries and season with salt and pepper. Place on baking sheet.
Step Two: Cooking
Place both trays in the oven that you preheated to 350 Degrees. Let cook for 30-40 mins.
Spray and flip sweet potato fries every ten mins so they are crispy and do not dry out.
Spray chicken twice during cook time. No Need to Flip.
Remove fries from the oven when they reach a crispy golden brown color. The best way to tell if they are done is to taste one. :-)
After removing the fries the chick should be done. Set the oven to Broil for five mins. This will allow the top of the chicken to really brown and soak up the salt and pepper. The tomatoes will also roast the most at this time.
Step Three: Plate and Eat
Carefully remove all hot foods from the baking trays onto a glass serving plate.
Enjoy!
Tips for Eating:
1. Try not to season your food any further. There is enough salt on it at this point.
2. Enjoy the natural flavors of the sweet potato and chicken/tomatoes. Adding extra condiments will add additional fat, SALT, and calories. If you must Ketchup is okay in moderation.
3. Do NOT deepFAT fry your fries. Baked fries are delicious and SO much better for your body. Adding OILS and BUTTER to this dish defeat the purpose of it being a LOW FAT dish.
