Crustless Vegetarian Quiche Lorraine

Ingredients
2 eggs2 egg whites1/4c chopped onion10oz frozen spinach, thawed and squeezed2tbsp bacos imitation bacon bits3 laughing cow wedges- light swiss1/4c light sour cream1/2c skim milk6oz evaporated fat-free milk (1/2 12oz can)1tbsp whole wheat floursalt and pepper to taste1/8tsp nutmegnon-stick spray
Directions
Pre-heat oven to 350.

In a pan, cook onions in non-stick spray until lightly browned. Add spinach and cook until slightly dry.

In a bowl, add eggs, sour cream, cheese, milks and spices. Beat with a wire wisk until blended well. Add flour and stir. Then add the bacos and spinach mix and stir to combine. Pour into a 9in pie plate that has been sprayed with nonstick spray. Bake for about 40mins
