Broccoli Cheese Soup

1 bunch broccoli (I used 4 cups, set some aside for the end)2 c sliced onions5 tb butter7 cups broth1 tsp oregano1/4 cup flour2 tb dijon 1/8 tsp pepper1 cup milk2 c cheesevelveeta for color.
Simmer broccoli in salt water 2 minutes. Cut stalks and saute with onions and 3 tb of butter for 5 minutes.
Add 3 cups broth, oregano and simmer 20-30 minutes. Process until smooth (I use an immersion blender)
Melt 2 tb butter in pan, add flour and whisk until smooth. Add mustard & pepper. Add to processed mix, along with 4 cups broth. Continue to simmer until begins to bubble. Add milk & cheese, stir til smooth & cheese melts. Add remaining broccoli florets.
