Whole wheat crepes

1 cup whole wheat flour1 1/2 cups milk (1%)2 large eggs1 tbsp Smart Balance oil
Makes 9 crepes. For simplicity sake, I counted each crepe as a serving, but I actually allow 2 per person.
Mix flour, eggs, milk and oil in a medium bowl. Heat a small nonstick pan over medium high heat. Add one fourth cup of batter to pan and rotate to cover evenly. Cook over medium high heat until top is no longer wet, about one minute. Carefully lift out of pan with spatula and place on wax paper or aluminum foil, cooked side down. When all the batter is cooked, fill each crepe with desired filling. I like fat free cream cheese and no-sugar-added cherry pie filling.
Each serving may be warmed in the microwave as desired.
