Chicken Diablo

Ingredients
2.5 lbs Chicken Breast, Boneless, skinless1 cup Honey1/2 cub prepared mustard (I use Dijon)3 tbs Curry Powder - Adjust to taste1 tbs chili powder - optional and adjust to taste1/2 Stick butter
Directions
Wash Chicken, pat dry.

Melt Butter in a small sauce pan over low heat. Stir in all ingredients except the Chicken.


Line a shallow baking dish with Aluminum foil or use a non-stick spray. Pour enough honey mixture to coat the bottom of the dish. Arrange the chicken breasts in the dish. Pour the honey mixture over the chicken, reserving half.

Bake in a 375 degree oven for 20 minutes, or until done, basting frequently.

Portion size is 4 oz, cooked with some of the reserve mixture drizzled over the top of the chicken.

Makes 10 4oz. servings.

Notes:
Calories can be reduced by not using reserve honey mixture.
For added flavor, before arranging chicken in the dish, use a flavor injector to incheck the chicken breast with some of the honey mixture.

I serve this over a bed of rice, utilizing a 50/50 mix of brown and Japanese white rice.
