Crustless Spinach Quiche

Nonstick spray1 clove garlic, minced1 large onion, sliced very thin1 16 oz. pkg. frozen chopped spinach, rinsed and spun in salad spinner to remove excess moisture4 large eggs, beaten1 cup milk 1%4 slices Cabot 50% light cheddar, cut in very small piecessalt and pepper to taste
Makes 4 generous servings or 6 smaller ones.
Spray a glass or ceramic pie dish with nonstick spray. Add onion slices and minced garlic to pie dish, spread evenly. Top with rinsed and spun-dry spinach. Beat eggs in 2 cup measure. Add enough milk to make 2 cups. Top spinach with cheese pieces, evenly distributed. Gently pour in egg mixture. Season to taste with salt and pepper. Bake at full power in microwave until eggs are set, 7 to 9 minutes.
Serve warm.
