Mitzi's Oriental Chicken and RIce Salad

Ingredients
Small Bag Frozen Peas and Carrots2 Chicken Breasts 2 Cup Chicken Broth1 Cup Water1 1/2 Cups White Rice1/4 Cup Soy Sauce1 Tbsp Oil
Directions
Take frozen peas and carrots out to thaw. Grill chicken breasts, let cool, and dice into bite sized pieces. Bring 2 cups of chicken broth and 1 cup of water to boil. Add rice, cover and cook on low for 20 minutes. (Do not uncover rice while cooking.) Stir soy sauce, vegetable oil into rice to coat. Add chicken and vegetables. Serve immediately or refrigerate to serve cold.
