Chicken & Shrimp Not Fried Rice

8 oz cooked shrimp1 baked boneless, skinless chicken breast1c diced onions1c diced celery1 can mushrooms, pieces & stems1 can low fat chicken broth2 large eggs2 cloves garlic1 tsp garlic powder1 tsp minced onion2c minute rice whole grain brown rice(4c cooked)2tbsp soy sauce low sodium
Drain and squeeze excess water from shrimp and set aside with chopped onions, celery and chicken breast. Cook the 2 cups of rice with 1 can of low fat chicken broth and juice from can mushrooms as per instructions on box. Cook veggies in a wok on stove until onions are translucent. Add in rice, chicken and shrimp until warmed then push to side and cook eggs, scrambled in center of pan as you normally would. Then mix throughout rice. Add Low sodium soya sauce to taste but the nutritional information for the soya sauce is from another user and it did not say low sodium so the sodium content may be incorrect on this recipe. Makes 8 - 1/2 cup servings
