PF Chang's Lettuce Wraps - Make at Home

Ingredients
2 tbsp. peanut or grapeseed oil1 c. water chestnuts, chopped pea-sized1 c. fresh mushrooms, minced2 cooked chicken breasts, minced OR 2 c. cooked ground chicken1 tsp. garlic, crushed3 tbsp. onion, minced4 scallions, chopped (green only)2 tbsp. soy sauce2 tbsp. brown sugar2 tsp. rice wine vinegar
Directions
Heat wok or non-stick pan on high heat.

Prepare sauce by combining soy sauce, brown sugar and rice wine vinegar in a small bowl. Mix thoroughly.

Add chicken, chestnuts, mushrooms, garlic and onion to heated pan. Pour sauce over and stir fry for a couple minutes. Add in scallions and stir fry until scallions are wilted. Remove from heat.

Transfer to a dish and serve with chilled iceberg lettuce leaves.
