Beef Barley Soup

Ingredients
  • 4 cups water
  • 2 beef bullion cubes
  • 1 medium potato, cubed
  • 1 medium onion, cubed
  • 1/2 bag frozen mixed vegetables
  • 1/2 teaspoon dried garlic powder
  • 1/2 pound boneless beef cut into cubes
  • 1 cup quick cooking barley
  • cracked pepper to taste
Directions
1. In large pot add water, beef bullion cubes (dissolved in a small amount of the water, heated in separate cup), and all the ingredients except the barley. Cook approximately 30 minutes at a minimum heat, or until meat is fully cooked and potatoes are soft.



2. Add the quick cooking barley and cook another 15 minutes. Serve hot. Add salt to taste.

    Very quick and easy - even for me. My husband and I both loved it. I made some slight changes and used two medium potatoes, 3 bullion cubes, 5 cups of water, some garlic clove rather than powder, parsley, sprinkle of red pepper, and some greek seasoning. Would definitely make again. - 10/17/08

    I tried this one yesterday. I omitted the potatoes to make it a bit more "South Beach" friendly. It is a good receipe but I would recommend maybe 2 more cups of water to begin with, the barley absorbed most ot it and my soup ended up more like a stew. - 2/23/09
