Mexican Meatloaf

8oz Ground Turkey1 lb roll of Italian turkey sausage2 large eggs1/2 C saltines crushed- Can use quick cooking oats1/2 Can of Fire roasted tomatoes- chopped to remove big clumps1 large onion1 large green bell pepperGarlic Powder- to taste2Tbsp Cilantro2Tbsp Cumin1 tsp. Black Pepper & Salt -or to tasteYour favorite salsa as a topping
Add chopped onion and green pepper to pan and saute till onion is soft.
In large bowl add meats, crackers, eggs, tomatoes, seasonings, and cooked onions and peppers. Using hands, mix together well until all ingredients are incorporated together.
Put mixture into loaf pan sprayed with Cooking Spray. Bake 400 for 3-45 minutes. You can bake covered with aluminum foil for the first 20 minutes, then remove so the top will be browned.
Remove from oven when done, let sit for 15-20 minutes. Top with salsa if desired. Enjoy!
Makes 6-8 good slice servings, depending on size of loaf pan.
