Whole Wheat Waffles, Reduced Fat

Ingredients
2 cups whole wheat flour4 tsps baking powder1/4 tsp salt1 tsp cinnamon1 T brown sugar1 tsp vanilla2 large eggs1 3/4 cup soymilk1/2 cup plain lowfat yogurt1 T canola oilnonstick spray for waffle iron
Directions
Preheat waffle iron. This recipe makes 7 waffles for an iron that take a 1/2 cup of batter per 4-section waffle.
Beat 2 eggs well. Add 1/2 cup of yogurt, 1 T oil, 1tsp vanilla, and 1 3/4 cup soymilk and mix thoroughly. In a separate bowl, whisk together the 2 cups of flour, 4 T of baking powder, 1 tsp cinnamon, 1/4 tsp salt, and 1 T brown sugar.
Add the dry ingrediants to the liquid mix and mix until blended. Do not overmix.
Cook batter in your waffle iron according to manufacturer's directions, until crispy and brown.
