Vegan Lowfat Cornbread Muffins

Ingredients
1/2 c. whole wheat flour3/4 c. white flour3/4 c. cornmeal4 Tbsp. sugar5 tsp. baking powder1/2 tsp. salt1/2 c. unsweetened applesauce1/2 c. lowfat soy milk1/2 c. water
Directions
Makes 12 Muffins

Mix dry ingredients in a large bowl. Mix wet ingredients in a small bowl. Add wet ingredients to dry ingredients and stir just until combined.

Divide evenly into 12 lined or lightly sprayed muffin tins. Bake for 22 -30 minutes or until top is golden.

    These were really pretty good. Tried cooking at 400 degrees since it didn't say and that seemed to work out ok. They stick to paper muffin liners so maybe spray those with non-stick or just grease up the pan good and skip the liners. - 5/20/11
