Chipotle Cowboy Pasta

Ingredients
Directions
1 cup pinto beans½ cup red pepper½ cup onions1 clove garlic½ cup corn2 cups 2 chipotle peppers in adobo½ tsp chili powder½ tsp cumin1 14.5 oz can diced tomatoes¼ cheddar cheese
Cook pasta according to package directions.
Saute onion and garlic until fragrant. Add chopped chipotle and red peppers.
Add remaining ingredients (except cheese) and simmer.
When pasta has finished cooking, drain and add to sauce mixture.
Serve topped with shredded cheddar.
Makes 4 1-cup servings.
