Chipotle Cowboy Pasta

Ingredients
Directions
1 cup pinto beans� cup red pepper� cup onions1 clove garlic� cup corn2 cups 2 chipotle peppers in adobo� tsp chili powder� tsp cumin1 14.5 oz can diced tomatoes� cheddar cheese
Cook pasta according to package directions.
Saute onion and garlic until fragrant. Add chopped chipotle and red peppers.
Add remaining ingredients (except cheese) and simmer.
When pasta has finished cooking, drain and add to sauce mixture.
Serve topped with shredded cheddar.
Makes 4 1-cup servings.
