Pumpkin Pie Oatmeal

Ingredients
3 c. 100% Whole Grain Old Fashioned Oats (not quick-cook)5 c. water1/2 tsp. salt1 1/2 tsp. pumpkin pie spice1 tsp. vanilla extract3 tbsp. sugar3/4 c. canned pumpkin (not pumpkin pie mix)3/4 c. pure maple syrup1/3 c. chopped pecans, toasted
Directions
In a saucepan, add oats, water, salt, pumpkin pie spice and vanilla. Bring to a boil, stirring frequently, then reduce heat to low and let simmer for 8 minutes or until water is completely absorbed.

While oats are cooking, toast pecans on stove top or in the oven until fragrant.

Once oats are done, stir in sugar then transfer to individual serving bowls. Top each bowl with 2 tbsp of pumpkin, 2 tbsp of maple syrup and 1 tbsp of toasted pecans.
