Low-Fat Vegetable Beef Soup

Ingredients
2 cups fresh tomatoes chopped2 cups cabbage chopped1 cup carrots, sliced1 cup onions chopped2 cups green beans1 cup barley1 cup fresh mushrooms sliced1/2 cup celery sliced1 lb. stew beef cut in small cubes1 64 oz. can low-sodium V8 juice1 garlic clove, minced1 Tbs Oil1/2 tsp thymepepper to taste
Directions
1. Cook the meat until tender in oil.

2. Combine all vegetables with cooked meat. Cook for 5 min. Add the V8 juice and the barley.

Season with pepper and thyme. Simmer for one hour. You may add more tomato juice if additional liquid is needed.
