Red Lentil Curry with Potatoes

Olive Oil, 1 tbspMinced Garlic, 1/2 tspOnion, 1/2 small, choppedRed Lentils, 2 cups (about 400 g)Chicken or Vegetable bouillon, 2 cubes Potatoes, 4 very small, peeled and chopped Carrots, 2 small, finely choppedWater, 3 cupsCurry powder, 1/2 tsp Cloves, ground, 1/8 tspGinger, ground, 1/8 tsp Turmeric, ground, 1/4 tsp Paprika, 1/8 tsp
Wash the red lentils in several changes of water until the water runs clear.
Heat oil in a deep non-stick pot. Fry garlic and onion until slightly browned. Add potatoes, carrots, lentils, 3 cups water, boullion, and lentils. Add curry powder and spices. Stir well and simmer on low heat for 30 minutes, or until lentils are soft and cooked.
Makes 6-8 servings and can be served on its own or with Basmati rice and yogurt (raita).
