Portabella Mushroom Stuffed Peppers

Ingredients
4 8oz cans of no salt added tomato sauce4 green peppers cored and seeded 4 Portabella mushrooms sliced and pureed2 cans no salt added Black beans pureed1 egg substitue1/4 cup bread crumbs1/4 cup onions chopped
Directions
Sautee the onions in a pan coated with cooking spray. Add
mushroms. Cook until lightly browned and then puree. In a mixing bowl combine the mushrooms,beans, the egg substitute, bread crumbs. Shape into 4 balls. Place the balls
into the peppers. Add the tomato sauce to the remaining mixture and place around the peppers. Cook in crock pot for 2-4 hours at medium heat
or until the peppers are tender. Makes 4 one cup servings
