Honey Ginger Pot Roast

Ingredients
Beef pot roast (rump, cross-rib, etc), 2 lbOlive Oil, 1 tbspGarlic, 1 cloveWater, tap, 2 cup (8 fl oz)Honey, 2 tbspwhite vinegar, 2 tbspVH Lite Soya sauce, 6 tbspGinger, ground, 1 tspCornstarch, 2-4 tbsp
Directions
Brown roast in pot in the olive oil and the clove of garlic (garlic powder may be substituted).

Mix 2 cups of water, 2 tbsp honey, 2 tbsp white vinegar, 4 tbsp soya sauce, and 1 tsp. ginger. If cooking on stovetop, pour over browned roast. If cooking in slow cooker, transfer roast to crockpot and pour honey ginger mixture over roast.

On stovetop, simmer slowly for 1.5-2 hours; in crockpot, cook on low for 6-8 hours. When roast is cooked, remove roast, stir together cornstarch and the remaining 2 tbsp soya sauce. Stir into honey ginger sauce to make gravy. If additional thickening is desired, add more cornstarch mixed with water.

Serve with mashed potatoes, rice, or salad.

    Delicious! I didn't have soy sauce or ginger so I used Worcestershire sauce and it turned out great. I simmered it on the stove as directed and the roast was tasty and fell apart easily. Everyone enjoyed this for dinner, as well as our kids. Thanks. - 4/4/08
