potato leek soup

Ingredients
create veggie stock in soup potin frying pan, melt butter. add leeks, onions, garlic and ginger. sautee until soft - appro 10 minutes. add a spoonful of stock and reduce move leeks/onions to the soup pot. add oil to the frying pan, add the potatoes and cook. (i liked to fry them a bit to add a smoker flavour) once cooked to your liking add to the soup pot.bring soup pot to a boil and then simmer for approx 40 minutes. blend with an emmersion blender....
