Pyramid Pumpkin Granola Bars

4 c. Old Fashioned rolled oats1 c. Rice Chex, gluten free cereal, crushed1 c. Quinoa Cereal1 c. raw almonds, crushed1 tsp. salt1 c. honey1/4 c. molasses1 1/2 c. crushed fresh pineapple or canned crushed pineapple in its own juice, lightly drained.2 c. fresh pumpkin puree or 16 oz. can pumpkin puree1/2 c. pumpkin seeds1/3 c. sesame seeds1 c. chopped dried apricot or raisins1/2 c. coconut3 tsp. Ener-G egg substitute4 Tbls. warm water1/3 c. nonfat instant dry milk powder2 tsp. pumpkin pie spice1 tsp. ground ginger 2 tsp. vanilla extract
Mix Ener-G egg substitue and warm water until blended. Then add the dry milk and vanilla extract. Mix well.
In a separate bowl add remaining ingredients and mix well. Finally, add egg and milk mixture and mix until well blended.
Spray 2 cookie sheets with cooking spray and spread half of the mixture evenly into each pan.
Bake at 350 degrees for 40 minutes.
Cool and cut into 48 bars.
