Pumpkin Cheesecake Bites with Tofu

Crust: 2 servings (16 halves) Nabisco cinnamon low fat graham crackers12 packets Truvia4 T unsalted butter - meltedFilling:1 egg - whole1 egg white1 C canned pumpkin1 small pkg silken tofu1/4 C honey6 packets truviaTopping:1/4 C chopped pecans
In a food processor crush the graham crackers until they are in fine crumbs. Add the truvia packets and then the melted butter. Press into muffin cups.
Cream together the eggs, tofu, honey, pumpkin and truvia. Divide into the muffin cups. Then top each cup with some pecans.
Bake @ 375 for approx 14-22 minutes. You will need to watch and pay attention to when they are firm. Allow to cool.
You can serve with cool whip free (not included in nutrition info)
