Celery Root Soup

Ingredients
1 leek,trimmed, chopped and washed1 clove garlic, or more to taste2 tbsp butter1 medium celery root, peeled and chopped in 1/2 inch cubes1/2 apple, granny smith is best, chopped in 1/2 inch cubes2 cups vegetable broth2 cups waterFor garnish (these are not included in nutritional info calculations) choose one or two:Apples, cut into matchsticks or small diceCrispy bacon, chopped into small stripsolive oilhoneycreme fraiche or sour cream
Directions
Melt butter over medium heat in a medium stock pot, add leek, cook and stir until soft, add garlic and cook until soft and fragrant.
Add celery root, apple, broth and water, bring to a boil, then reduce heat, simmer about 40 minutes, or until celery root is soft enough to puree. If liquid gets too low to cover ingredients, add more water or broth.
Puree soup in a blender or food processor. You may need to do this in two batches, and you may want to let the soup cool a bit first to avoid burning yourself. If too thick add more water or broth.
To serve, return to pot and heat over medium heat, then ladle into bowls and garnish with fresh apple, some crisp bacon or a drizzle of olive oil or honey.
