Pumpkin Chili

2 cups canned or fresh pumpkin3 pounds lean ground turkey2 cans red kidney beans2 Medium onions, Chopped3 cans diced tomatoes2 tablespoons Chili Powder3 Packets Splenda1 teaspoon salt2 large bay leaves1 cup canned mushrooms (optional)1/4 teaspoon Red Pepper Flakes (optional)
1. Brown and drain ground turkey.
2. Add all the ingredients together in a large pot and mix together.
3. Simmer on low for about 1-2 Hours

2. Add all the ingredients together in a large slow cooker (6-7 quart) and mix together.
3. Cook on low for 6 hours
This recipe makes about 11 1 cup servings.
You can serve with crackers or a hearty bread. I'm in Hawaii, and we eat rice with everything, so I like this over 1/2 cup of brown rice.
