Pasta in beet sauce

Ingredients
- 2 minced garlic cloves- 500 gms fat free yoghurt- 200 gms pasta (Cornetti Lisci style i.e. curved little pieces)- 1/2 boiled beet (medium size) diced- fresh mint leaves for decoration
Directions
Peel and mince 2 cloves of garlic. Add plain non fat yoghurt to minced garlic. dice 1/2 the boiled beet. (Cooking beets takes a long time, I suggest getting canned precooked beets but make sure no sugar is added) Cook pasta and let cool for 5 min then add to the prepared youghurt. Add salt according to taste and mix well. Makes 3 servings. Garnish each with fresh mint leaf.
