Hearty Tortellini Soup

Ingredients
16 oz. Buitoni 100% Whole Wheat 3 cheese tortellini2 32-oz. cartons Swanson Chicken Broth1 lg can diced tomatoes (~2 cups, with juice)8 oz. sliced fresh mushrooms1 can black beans, drained (~1.5 cups)2 cups chopped fresh baby spinach1 can quartered artichokes, drained1 medium orange or red bell pepper, cubed1 medium yellow onion, chopped4 cloves garlic, diced2 tsp oregano2 tsp basil1 tsp paprika
Directions
In a large stock pot combine broth, mushrooms, black beans, spinach, and artichokes, bring to a boil.
Spray a saute pan with cooking spray. Cook onion, pepper, garlic. Season with oregano, basil, paprika. Saute until tender. Add to stock pot.
Once the combined stockpot comes to a boil, add the tortellini and boil for 10 minutes.
Ladle into bowls, sprinkle with 1 tbsp grated Parmesan, serve.

Makes 8 1.5-cup servings.
