Coconut Curry Chicken with Rice Noodles

Ingredients
1.25 lb chicken breast, thiny sliced4 cups chicken broth4 cups water1 can coconut milk (13.5 oz)1 shallot, thinly sliced1/4 cup red onion, thinly sliced1 T minced garlic1 T fish sauce1 tsp salt1 tsp white pepper1/2 tsp cayenne pepper1/2 tsp chili powder2 T curry powder1/2 cup frozen peas16 oz uncooked rice noodles
Directions
Bring chicken broth to a boil in a pot on the stove. Add chicken and cook until no longer pink. Add coconut milk, water, garlic, salt, white and red pepper, curry powder, chili powder, and fish sauce. Bring to a boil. Add noodles, shallots, onions, and peas and cook until noodles are tender. Makes 12 one-cup servings.
