Hering salad

Ingredients
Olive Oil, 1 1tsp Apples, fresh, 50 Lemon Juice, 125 mL Onions, raw, 0.50 cup, sliced Peppers, sweet, red, raw, sliced, 0.13 cup Water, tap, 125 mL Quark, 100 gram(s) White Vinegar, 4 tbsp Hering salted, 135 gram(s)
Directions
Soak the salted hering in water for about 3 days, changing the water once daily.

On the third day make a marinade from the lemon juice, vinegar, water and oil.
Chop the bell pepper into cubes and add to the marinade.
Finely slice the onion and add to the marinade.
Cut the hering into bite size pieces and cover with the marinade at least over night or longer.

The next day, add some of the marinade with the onions and bell pepper to the quark until you get a consistency that is not quite runny.
Chop the apple into small cubes and add to the quark mixture.
Take the hering out of it's marinade and poor the quark mixture over the fish.
Leave to soak for a few hours.

Serve with lettuce and potatoes boiled in the skin.
Do not boil the potatoes in the microwave as there is quite a difference in taste when boiled the conventional way.
