Chicken Chili (tomato-based)

2.5 lbs chicken cut into 1/2" cubes2 C chopped celery1.5 C chopped onion4 cloves garlic - minced2 TBS cooking oil2 15 oz. cans tomato sauce1 14.5 oz. can tomatoes, cut up1 C chicken broth1 medium sweet red pepper - chopped1 bay leaf2 TBS chili powder1 TBS sugar1 tsp dried oregano - crushed1/2 tsp. ground cumin8 oz. dried mushrooms (optional)
Cook half the chicken, celery, onions and all of the garlic in hot oil in a dutch oven until chicken is brown and vegetables are tender. Remove from dutch oven. Repeat with remainder of chicken, celery & onions. Return all to pot. Stir in tomato sauce, tomatoes & broth. Bring to boil; reduce heat. Simmer covered for 15 min. add rest of ingredients. Simmer covered 30 min. Remove bay leaf; stir in mushrooms before serving.
