Italian Chickpea Soup

Ingredients
2 cups vegetable broth1/2 medium onion, chopped1 clove garlic, minced1/2 small bay leaf1/2 tsp oregano1/2 tsp thyme1/8 tsp cayenne pepper16 oz can chickpeas, rinsed & drained1 large sweet potato, peeled & cut into 1/2 inch cubes1/2 stalk celery, finely diced1.5 tsp Dijon Mustard1/2 cup fresh chopped parsley
Directions
!) Bring broth, onion, garlic, thyme, oregano, cayenne pepper and 1 cup of water to a boil in large saucepan over med heat. Simmer 5 minutes. Add chickpeas, sweet potatoes, celery and mustard. Simmer 10-12 minutes more or until vegetables are very soft.

2) Mash vegetables & chickpeas to chunky puree with potato masher. Stir in parsley and season with salt & pepper, if desired.
