Vegetable Fajitas

Ingredients
Yellow Sweet Corn, Frozen, 0.33 cup kernelsSpinach, fresh, 1 cupAsparagus, fresh, 5 spear, small (5" long or less)Green Peppers (bell peppers), .5 cup, stripsRed Ripe Tomatoes, .5 plum tomatoOnions, raw, 2 slice, large (1/4" thick)Olive Oil, 2 tbspCilantro, raw, 2 tbspGarlic, 2 clovesSaltPepperCumin
Directions
Chop all vegetables to desired size. Mince garlic and cilantro. Heat garlic and olive oil in saute pan. Add onion, asparagus, and peppers and cook until they begin to become tender. Add corn, cilantro, and spices. Continue to cook until vegetables become tender. Add spinach and tomatoes and cook for another 2 minutes or so.

Serve warm with whole wheat tortillas and any other desired dressings (cheese, sour cream, guacamole, etc.).
