Zucchini and Fava Bean Fritters

Ingredients
3 medium zucchinis1 can (19 oz) fava beans, drained (or you can use fresh ones, blanched)2 to 3 eggsAbout 1/2 cup of breadcrumbsGreen olive paste or tapenade (you could also throw seeded olives into the food processor)About 1/2 cup of sun-dried tomatoes, choppedGarlic to tasteGrated parmesan cheese (optional)Salt and pepper to taste
Directions
Preheat oven to 375F.

Shred zucchini in the food processor using the grater attachment. You could grate this by hand too but it takes a while and kind of defeats the quick 'n' easy point of this dish. Set zucchini aside in a large mixing bowl.

Put the blender attachment in the food processor. Put the remaining ingredients in it. Blend well. Pour into the bowl with the zucchini and stir to combine.

Lay a sheet of parchment paper on a baking sheet. You can also grease a sheet instead of using the paper but I find parchment to be pretty much stickproof and it makes cleanup easier. Take tablespoons of the mixture and blop it onto the sheet to make little patties. Bake at 375 till lightly golden; about 25-30 min. Let cool slightly before serving, as the patties will solidify a bit.

    I wasn't sure what to expect, but these turned out almost like veggie burgers. I put some No Sodium Ketchup on top for some added zing, but next time I will try salsa as the sweetness of the ketchup did not compliment them as well as I think salsa might. They were flavorful and I will make again. - 8/19/08
