Fried Udon with Vegetables

1 package udon noodles1/4 cup tamari1 tbsp dark sesame oil1 medium red onion, cut into half moons1 medium / large carrot cut into matchsticks1 celery stalk cut diagonally
Serves 4
Boil water for noodles. Once water is boiling, cook according to directions, or 3-5 minutes if using fresh noodles. Drain and rinse noodles under cold water.
While noodles are cooking, heat sesame oil in pan and prepare onions, carrot and celery. When pan is heated, add onion and saute for 3-4 minutes. Add celery and carrots and
saute for 4-5 minutes.
Add noodles and tamari to pan, cover, and simmer over low heat for 10-15 minutes, until vegetables are tender. Serve and enjoy!
