L.R. Three-Bean salad

Ingredients
4 T. cider vinegar4T. rice vinegar1 T. sugar1 tsp. dry mustard1 T. olive oil1/2 tsp. salt Freshly ground pepper to taste1/3 cup diced red onion3-1/2 cups cooked black-eyed peas, rinced2 cups cooked black beans, rinced 6 cups fresh green beans, trimmed and cut into 10inch pieces or can use frozen, thawed2 T. chopped fresh parsley
Directions
Cook green beans in boiling water until just tender. Drain and place in cold water; drain and repeat until beans are cool. Combine all ingredients in a medium sized bowl. Makes about 7 cups.
