Ricotta and Green Chili Rice

Ingredients
1-2 bouillon cubes1.5 cups brown riceOne 4oz can of diced green chilies1 cup part-skim ricotta cheese1/4 cup fresh parsley
Directions
Boil 4 cups of water with the bouillon cubes. Stir in the rice, reduce heat to a bare simmer, and cover. Simmer the rice until all the water is absorbed and the rice is cooked through.

Stir in the remaining ingredients and continue to cook until everything is heated through.


Serves 4-6 (I said 4 diners in the calculation; 6 servings will have 117 calories each)

Tastes wonderful with a bean stew and a fresh green salad!
