1 can corn, drained (1-1/3 cups)2 extra large eggs3 tablespoons whole grain flour1/2 teaspoon kosher salt1/2 teaspoon baking powder1/2 teaspoon sugar1/4 cup unsweetened soy milk1/4 cup diced onion1/4 cup diced roasted red bell pepper1/2 jalapeno pepper, minced
Preheat oven to 400 degrees. Puree corn and eggs with a hand-held blender to break up corn kernels but not smooth. Add remaining ingredients, stir just to incorporate flour, do not over mix. Pour into a lightly oiled small baking dish or cast iron skillet and bake until set, 30-40 minutes.
