Vegetarian Split Pea Soup

10 cups chicken broth2 cups split peas, rinsed and sorted20 baby carrots, chopped into bits1 medium potato, chopped into bits1 medium onion, chopped into bits5 stalks celery, chopped into bits2 T minced garlic1 tsp salt1 tsp pepper1 tsp red pepper flakes
Saute chopped onion, carrots, potato, celery and garlic, in medium large soup pot for 5 minutes until tender. (I used 2 T butter to saute however that isn't listed in the ingredients... you may wish to use non-stick cooking spray). Add 10 cups chicken broth, 2 cups rinsed and sorted split peas, salt, pepper and red pepper flakes. Bring to a low boil, then simmer for about an hour until reaches desired consistency. Makes 6 very hearty servings.
