Ingredients
1/4 cup butter, softened6 Tbsp. boiling water1/2 cup cocoa powder2 tsp. vanilla extract3-1/2 cups confectioners' sugar
Directions
In a small bowl, stir together butter and water until butter is melted. Add cocoa and vanilla, beat until well blended.

Gradually add powdered sugar, beating until smooth, creamy and of spreading consistency. Add additional water or sugar, if necessary.

    i made this icing vegan by using vegan butter and I substituted the vanilla for pure maple syrup. I also used about half the amount of powdered sugar. It tasted great on top of the low fat cocoa vegan cake - 5/28/08
