Halupki Casserole

1/2 head regular cabbage, or 1 head baby cabbage, chopped4-6 slices cooked bacon, crumbled1 Tbsp bacon grease1/2 large onion, diced1/2 pound ground beef1/3 c uncooked rice16 oz tomato sauce, divided1/2 c watersalt, pepper, onion powder1/4 c grated parmesan8 oz sauerkraut
Par boil chopped cabbage in salted water for 4-5 min. While doing this, saute onion in bacon grease until translucent. Add ground beef and brown, seasoning with salt, pepper, and onion powder to taste (you'll want to be a little heavy handed because of the cabbage and tomato sauce both being unseasoned). A few minutes before done, add in uncooked rice and let cook until beef is browned. Add 8 oz tomato sauce and water, and simmer covered 20-25 min or until rice is cooked and most of liquid is absorbed. Crumble bacon into meat mixture.
In casserole dish, layer half of the cabbage, then all of the meat mixture, then remaining half of cabbage. Sprinkle with parmesan cheese. Pour remaining tomato sauce over casserole. Top with sauerkraut.
Bake at 350 for 40 min. Serve with mashed potatoes.
