Lip Smacking Lentil Cookies

Ingredients
1 c soft margarine1 c brown sugar1 c canned lentils, drained1 tsp vanilla2eggs1.5 c whole wheat flour1 c quick cooking rolled oats1 tsp baking soda1/2 tsp salt1/2 tsp cinnamon3/4 c carob chips
Directions
Preheat oven to 375 F. Cream together margarine, sugar and lentils. Stir in vanilla and beaten eggs. combine dry ingredients and stir into lentil mixture. Drop from spoon onto greased cookie sheets. Bake for 12 minutes.

Makes 24 cookies.
