Banana Bran Blueberry Whole Grain Muffins

1 cup 50/50 whole wheat/white flour3/4 cup oat bran1/2 cup 5 grain hot cereal mix1 T baking powder1/3 cup dried blueberries1/4 cup chopped walnuts1 1/4 cup soy milk1/4 cup maple syrup1 Eggland's Best egg2 large mashed bananas
Mix dry ingredients, including dried blueberries and nuts. Toss mixture to coat. Mix wet ingredients, including mashed bananas. Fold ingredients together. Spray muffin tins with non-stick cooking spray. Spoon into tins, leaving room for rising. Bake at 450 degrees for 15 minutes in pre-heated oven. Remove from oven and cool slightly. Use plastic knife to remove from muffin tins and place on cooling racks. May freeze after cooling well. To reheat after refreezing, microwave for 30 seconds and enjoy.
