Quick Miso Soup for one

2 cups water1 clove garlic-peeled and crushed1 inch piece of ginger2 tbsp miso1/4 cup firm tofu cubed1 small carrot minced or grated1/4 cup green veges-your choice
Makes one serving
1) In a medium soup pot bring water to a boil
2) Reduce heat and add garlic and ginger
3) Cover and let simmer for 8 mins
4) Remove garlic and ginger with slotted spoon and turn off heat.
5) In a small bowl, stir together the miso and 3tbsp of the stock you have just made until the paste is smooth
6) Add all the ingredients to the water and cover to sit for 3-5 minutes.
This could be one large serving or two smaller ones.
